My mom was very offended that I previously made zucchini bread with 3 eggs in it so that she could not eat it so I made her this loaf. She ate the whole thing in one sitting during breakfast so I think that means she likes it. Mix the wet and dry ingredients separately and then combine, add zucchini in last. Bake for 45-55min at 325 degrees
1.5 c flour
.5 c sugar
.5 c brown sugar
.5 t baking soda
.5 t baking powder
1 t cinnamon
1 c applesauce
.5 c vegetable oil
1.5 t vanilla
1 c grated zucchini
